The Mix for Black Nuggets with Charcoal Semolina is an original idea to replace traditional bread with tasty black bites made with Activated Charcoal—an ingredient classified as a coloring agent, yet offering interesting functional benefits. Also perfect for making Black Pizza dough. It can also be used to create sandwiches, croissants, cookies, and focaccias.

Let’s be clear: by law, dough containing activated charcoal cannot be marketed as “bread”, even if it's eaten like bread. That’s why we call it a delicious “Black Nugget”! There are no restrictions when it comes to adding charcoal to pizza, toast, snacks, and all types of fine bakery products!

From a food regulation perspective, charcoal is classified by EU Regulation No. 1333/2008 as a natural coloring (E153). Pharmacologically, it is known for its ability to reduce bloating, acidity, and intestinal gas, thanks to its physical capacity to trap gases and liquids.

Charcoal may legally be used in fine bakery products (as per Italian Ministry of Health circular of 22/12/2015), but not in bread. It’s mostly a formal distinction: with our Black Nugget Mix, you can create beautiful and delicious results, great for stuffing with cheese and cured meats for a colorful presentation. You can also make pizza dough that offers a fun contrast to mozzarella’s white and tomato’s red—or whatever your imagination desires. Your dinner guests will be amazed!

The amount of charcoal used in the Black Nugget Mix is minimal. To put it in perspective, the suggested daily dose for aiding digestion is 1.2–1.4 g of activated charcoal, which would require eating over 1.5 kg of finished product—an unlikely quantity for one person.

The Black Nugget Mix also contains a blend of flours (soft wheat, durum wheat, oat flour, barley flour), sourdough, and sunflower lecithin to preserve the product’s softness and fragrance, since charcoal alone can dry out baked goods quickly.

Lastly, the charcoal we use complies with H.A.C.C.P. and U.S. Food Chemicals Codex standards, is odorless and tasteless, and is widely used in pharmaceuticals and licorice production.
