Did you know that breakfast can influence a hotel review more than any other service?
For travellers, breakfast is not simply the first meal of the day: it is a moment filled with expectations and sensations. Upon waking, it represents the first real encounter with the hotel’s hospitality and often the final memory before check-out.
The breakfast buffet is also one of the most photographed areas during a stay. A fragrant, golden and perfectly crisp croissant, accompanied by a creamy espresso, is far more likely to appear on social media than even a beautiful and elegant lobby.
Breakfast is also one of the aspects guests are most likely to mention in their reviews. A clean and tidy room is now considered an essential requirement; at the breakfast table, however, a hotel has the opportunity to surprise, delight and leave a truly personal impression.
But what makes an excellent breakfast?
Italian breakfast
A good Italian breakfast is based on simplicity, but requires great attention to quality:
- Espresso coffee, cappuccino and beverages prepared to order;
- Fragrant croissants, plain or filled with custard, jam or chocolate;
- Traditional cakes, tarts, ring cakes and plumcakes;
- Fresh bread, rusks, butter, honey and preserves;
- Biscuits, cereals, yoghurt and seasonal fruit.
The aroma of coffee and freshly baked products immediately creates a warm and welcoming atmosphere. It may appear to be a simple breakfast, but it is capable of conveying care and authenticity.
International breakfast
International guests often look for a wider selection that also includes savoury options and hot dishes:
- Scrambled, fried, boiled or freshly prepared eggs;
- Bacon, sausages and grilled vegetables;
- Cheeses, cold cuts and different types of bread;
- Pancakes, waffles and French toast;
- Smoked salmon and vegetarian options;
- Porridge, muesli, granola and dried fruit and nuts;
- Juices, freshly pressed drinks and plant-based beverages.
Variety is important, but it should not turn the buffet into a disorganised display. A carefully selected, fresh and regularly replenished offer is better than a very large selection that lacks attention and quality.
The value of local traditions
Whether the breakfast is Italian or international, it is also worthwhile including regional specialities that can tell the story of the local area. Guests are not only looking for something to eat: they also want to discover the destination through its flavours.
Presentation
Even the finest product loses value if it is poorly presented. An effective buffet should be tidy, bright, easy to access and inviting.
Small details can make a major difference:
- Bakery products displayed neatly and properly protected;
- Clear information about ingredients and allergens;
- Hot food served at the correct temperature;
- Fresh fruit prepared and ready to enjoy;
- Practical individual portions without excessive packaging;
- Clean tableware and tables cleared promptly.
Presentation matters: colours, aromas and the arrangement of the products contribute to the experience just as much as flavour.
Freshness is not simply a characteristic of the product: it is a message of care, attention and respect for the guest.
Whenever possible, it is preferable to avoid frozen products that are simply thawed or reheated, especially croissants, bread, cakes and savoury preparations. Guests can easily recognise the difference between a freshly prepared product and one that has been regenerated or industrial: aroma, crispness, texture and flavour immediately reveal the hotel’s level of care and attention.
Attention to different dietary needs
A modern breakfast should accommodate different eating habits and dietary requirements. It is therefore important to offer alternatives that are:
- Gluten-free;
- Lactose-free;
- Vegan and vegetarian;
- Without added sugar;
- Wholegrain and high in fibre;
- High in protein;
- Suitable for children.
It is not necessary to create a separate buffet for every dietary need. Carefully selected and clearly labelled products, together with staff who are able to provide accurate information, are often sufficient.
Service makes the difference
A smile, a sincere greeting and a cup of coffee served with care can be just as valuable as an extensive buffet. Staff should be attentive without being intrusive, quick to clear and rearrange tables, and ready to respond to guests’ requests.
A memorable breakfast does not depend only on the quantity of products, but on the right balance of quality, variety, atmosphere and hospitality.
Breakfast is the final good morning that a hotel offers its guests. And very often, that good morning is what turns into a five-star review.
