Type "2" wheat flour is made by milling wheat along with most of its outer layer, thus retaining much of the grain’s fiber. It has characteristics that are intermediate between Type "0" or "00" flours and whole wheat flour.

Type "2" soft wheat flour is essentially considered a middle ground between wholemeal flour (which contains the entire outer part of the grain) and more refined flours. Thanks to the higher amount of bran, it has a lower glycemic index compared to type "00" flour.
It has a darker color than more refined flours and a slightly coarser texture.
Type "2" flour is excellent for preparing pizza and rustic baked goods, as it gives a fuller texture and a richer flavor compared to more refined flours.
DOSAGE: Use as needed in the preparation of all types of bread and pasta.
