The yeast commonly used to make bread is known as baker's yeast. This yeast (microorganism) was discovered back in 1680 by observing under a microscope the deposits formed during beer fermentation. Yeast naturally feeds on sugar and produces carbon dioxide (gas), which, when properly added to dough, makes it rise so that the bread becomes pleasant to eat after baking.
For more information, you can read some articles published on our website: yeast as a leavening agent read here or how to use this "renowned" microorganism read here.
Due to its ease of use and reliable ability to make dough rise, baker's yeast is widely used not only in bread making but also in pastry and pizza making. What we offer is dehydrated yeast, meaning the water has been removed to block its metabolism and extend its shelf life.
It is called "instant" because it does not need to be dissolved in (warm) water. It should not be confused with "instant baking powder" based on chemical leavening agents (you can find it on our website here).
Our yeast is vacuum-packed in 500-gram packages. Vacuum packaging ensures a shelf life of several months. Even after opening, it keeps well at room temperature and up to a year if stored in the refrigerator.
DOSAGE: Use three times less (1/3) compared to the amount of fresh (compressed) traditional baker's yeast indicated in recipes.
