Manitoba flour is named after its place of origin, the Manitoba region in Canada! It is known for its high gluten (protein) content, often classified as a "strong" flour because it has a very high W value, generally around or above 400. Today, any highly protein-rich flour is referred to as Manitoba, and it is often grown also in Australia and parts of Central Asia.
Due to its high gluten content, this flour allows for the development of a strong gluten network, which better traps the gases produced during leavening. Moreover, it has an excellent capacity to retain large amounts of water during processing, helping to achieve very soft and well-leavened products. These characteristics make it ideal for doughs requiring long leavening times, such as:
- Panettoni
- Pandori
- Colombe and similar cakes
It is important to remember that Manitoba flour is not suitable for all recipes: for example, it is not ideal for simpler cakes or shortcrust pastry, as being a strong flour, it may compromise the final product's crumbliness or tenderness.
As already mentioned, besides the above-mentioned leavened desserts, Manitoba flour is often used to strengthen weaker flours (i.e., flours with a lower W value), improving the elasticity and stability of the dough.
DOSAGE: Use as needed, either alone or to blend with weaker flours (those with low protein content).
