REMOVING THE CAKE FROM THE PAN: What does it mean to "butter" baking pans or molds?
Literally, "buttering" means spreading a thin layer of butter inside baking pans or cake molds before pouring in the batter that will be baked. This technique is used for cakes with a semi-liquid batter, which could otherwise stick to the pan.
Instead of butter, any other cooking oil can be used. Pizza trays or pans used for baking bread also need to be properly greased, typically with a thin layer of olive oil. There are also spray-on products available that contain vegetable oils and lecithin, which create a liquid emulsion. These products, known as "release sprays," are very convenient and much more efficient than butter for greasing pans.
We offer one of these products in our catalog, called FORM SPRAY. Click here to view the product page.
