BAKING PAPER: What is  baking paper, and are there alternatives for proofing bread?

Baking paper is a type of silicon-coated paper that can withstand high temperatures without catching fire. When properly cleaned, it can be reused, provided it doesn’t turn excessively brown.

For homemade bread, it is common to proof the dough on a baking tray lined with baking paper for convenience.

Alternatives to Baking Paper

- Oiling the tray: Instead of using baking paper, lightly oil the tray by spreading a thin layer of oil over the surface with your hands.

- Dusting with flour: Another option is to sprinkle a bit of flour onto the tray before placing the dough.

Both methods work well and prevent sticking during proofing and baking.
