FERMENTATION TEMPERATURE: What is the best temperature for fermentation?

The best fermentation temperature is the one at which the yeast produces gas effectively to make the dough rise. This temperature typically ranges between 28-32°C. In professional settings, a controlled fermentation chamber or "proofing box" is used to maintain the ideal temperature. For home use, in summer, the ambient temperature is usually sufficient. In winter, it's best to allow the dough to rise near a radiator or other heat source (covered with a plastic cloth), or by placing it inside a slightly pre-warmed oven. However, the downside of using the oven is that once fermentation is complete, the oven might not be ready for baking, unless you only partially warm it, allowing the dough to rise for the first 30 minutes.
